The cookies from yesterday's mom-of-4 moment were really good. Tasted like really good snickerdoodles. They came from a cookbook called, "Food Writers' Favorites: Cookies". I picked it up in the pre-scouring of my mother-in-law's garage sale years ago. Apparently they were a series of cookbooks based on food writers' favorites. This one just happened to be the best topic--unless, of course, they have an entire book dedicated to pies. I've only tried about 8 of the recipes, and all but one have been dynamite! This one was no exception. We accidentally put in two teaspoons of baking soda instead of one, so our cookies might have risen more that most would.? We also overdid the cinnamon a bit, but that worked beautifully. Also, our dough wasn't firm enough to hold shape after my kids had played with it, so we ended up doing walnut-sized drops.
Try it out!
Cinnamon Letters
1-1/2 cups plus 3 T granulated sugar, divided
1 cup unsalted butter, softened
2 eggs
3 cups all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tsp. ground cinnamon divided
Cream (1-1/2 cups) sugar and butter, then add eggs. Beat until blended. Sift flour, baking powder, baking soda, salt and 1/2tsp. cinnamon (that's where we added a bit more) over butter mixture. Mix, forming stiff dough. Cover and refrigerate 2 hrs.
Paint fingernails and toenails and read a book.
Divide dough into 48 walnut-sized pieces. Shape each piece of dough into a 5-6 in. long rope. Shape ropes into letters, circles, knots, triangles or whatever. Place on greased baking sheets, leaving about 2 in. between cookies.
In a small bowl, combine remaining 3 T sugar and remaining 1-1/2 tsp. cinnamon. Sprinkle cinnamon-sugar mixture over cookies.
Bake at 350-degrees 13-15 min, or until golden brown. Cool, then enjoy.
